  1. In a large sauce pan add in your neutral oil on medium heat.
  2. Add in the green curry paste and heat through 
  3. Then add the white onion, garlic, ginger, lemongrass, and chicken thighs
  4. Stir until the chicken is coated in the spice mixture
  5. Add in the coconut milk, mole paste, fish sauce, sugar, lime juice, and herbs 
  6. Combine thoroughly and allow to simmer thoroughly on medium to medium-high until chicken is cooked through.
  7. Serve over jasmine rice. 

Ingredients

  • 2- tbsp neutral oil 
  • 4-5 tbsp green curry paste
  • 1 large white onion
  • 2 tbsp minced garlic 
  • 2 tbsp minced ginger
  • 4-5 stalks lemongrass 
  • 2-3 lbs boneless chicken thighs 
  • 1 can coconut milk 
  • 1 jar La Costeña mole paste 
  • 1 tbsp fish sauce 
  • 1/2 tbsp sugar
  • Juice from 1 lime 
  • 5-6 kefir lime leaves 
  • 1 bunch Thai basil
